Shou puer is heaped into large piles to ferment. On regular intervals the large heaps of tea are rotated. These chunks, which vary in size, develop at the bottom of the heap where the tea is not consistently rotated causing it to have a greater amount of fermentation than the rest of the batch. This tea's flavor profile is earthy, with hints of worn wood, dark chocolate, burnt sugar, flint, licorice, vanilla, and camphor.
